Gaspillage alimentaire en restauration d’entreprise : une analyse qualitative des normes personnelles et sociales

Abstract

With the adoption of the national pact against waste, France's goal is to halve the phenomenon by 2025. In this article, we present the results of an exploratory study about the existence and influence of personal and social norms on waste behavior in corporate catering. We show the existence of a personal norm against waste and contradictory descriptive and injunctive norms that are expressed either at the level of the group we are eating with or that of the entirety of customers. ....French Abstract : Avec l’adoption du pacte national de lutte contre le gaspillage alimentaire, la France se fixe comme objectif de réduire de moitié le phénomène d’ici 2025. Dans cet article nous présentons les résultats d’une étude exploratoire sur la présence et l’influence des normes personnelles et sociales sur les comportements de gaspillage dans des restaurants collectifs d’entreprises. Nous montrons l’existence d’une norme personnelle de non gaspillage ainsi que la perception de normes descriptives et injonctives contradictoires qui peuvent être activées à deux niveaux de proximité : au niveau du groupe avec lequel on mange ou à l’échelle de l’ensemble des usagers du restaurant.
