Disponibilidad a pagar por atributos de calidad. Un estudio aplicado para el caso de la leche fluida

Abstract

En la última década, tanto la oferta como la demanda de productos alimentarios han experimentado importantes cambios. Desde la oferta, la mayor disponibilidad de productos en el mercado y de requerimientos de cumplimiento de estándares y normas de calidad en cada uno de los eslabones de la cadena. Y desde la demanda, las transformaciones demográficas, socioculturales y de conducta de los consumidores; conjuntamente con la irrupción de severas crisis alimentarias, promovieron el surgimiento y desarrollo de nuevas preferencias de consumo por otro tipo de alimentos. Consecuentemente, la certificación del proceso productivo y el añadido de nutrientes son considerados atributos adicionales de calidad del producto sobre los cuales el consumidor toma decisiones al momento de comprar. Este trabajo, siguiendo los lineamientos del método de valoración contingente, pretende evaluar la disposición a pagar (DAP) por atributos de calidad, utilizando la leche fluida como caso de estudio. A partir de una encuesta a consumidores realizada en la ciudad de Mar del Plata, se presentan resultados que sugieren que a pesar de que los consumidores se encuentran preocupados por la calidad de los productos que consumen, la disposición a pagar por atributos adicionales es baja. La misma se incrementa en relación directa con la información que procesan y si priorizan cuestiones de calidad y seguridad antes que el precio, al decidir sobre sus compras.
