A Noção De Terroir E Sua Influência Na Dinamização Da Cadeia Produtiva Dos Vinhos Finos

Abstract

Todos os produtos agroindustriais são localizáveis espacialmente. Mas alguns são mais dependentes da apropriação do espaço para a transformação em mercadoria, do que outros. No contexto da cadeia vitivinícola mundial esta relação do produto com seu local de origem pode ser percebida como um sinônimo de qualidade e autenticidade, especialmente para os vinhos de terroir. Para entender a influência do terroir no âmbito da cadeia produtiva torna-se necessário abordar diferentes questões além da qualidade, como: preço, papel do consumidor, inovações, tecnologia, uso dos recursos, desenvolvimento, entre outras, em seus diferentes elos. Por este motivo, propõe-se neste estudo a abordar a discussão do terroir e suas possíveis implicações e influências nos três elos mais significativos da cadeia vitivinícola: consumidor, industrialização e produção da matéria-prima. Como resultado observou-se que para o uso da noção de terroir como guia para as práticas produtivas na cadeia vitivinícola é necessário envolver nesta lógica os elos de forma conjunta, dando-se especial atenção para o elo do consumidor, pois pela especificidade do segmento de concorrência todos os esforços para agregar valor ao produto realizados à montante, dependem do reconhecimento do consumidor que se visa sensibilizar, e de quanto isto pode influenciar positivamente na sua decisão de compra.------------------------------------------------Every agro-industrial product is spatially locatable. But some are more dependent of the appropriation of space for its transformation into products than others. In the context of the global wine chain, the relation of the product with its place of origin can be considered a synonym of quality and authenticity, especially regarding terroir wines. In order to understand the influence of the terroir in the ambit of the productive chain, it is necessary to approach issues other than quality, such as: price, consumer role, innovations, technology, use of resource and development, among others, in their different links. For this reason, this article proposes to approach the discussion of terroir and the possible implications and influences in the three most significant links of the wine chain: consumer, industrialization and raw material production. As a result, it was observed that for the use of the notion of terroir to be effective as a guide for the production practices in the wine chain, it is necessary to involve the links in this perspective, giving special attention to the consumer link, because due to the specificity of the segment, every effort to add value to the product depends on the recognition of the consumer that is sought to sensitize, and how much this can influence positively on his decision to purchase the product or not.
