Bioeconomía y consumo: valoración de alimentos saludables y sustentables

Abstract

Desde hace unos años, viene cambiando el paradigma de la agricultura y la alimentación imperante hacia uno más sustentable, con mayor conciencia por la salud y el ambiente, impulsado por la bioeconomía. Esta transición comprende a todos los agentes de la cadena. Precisamente, en esta Comunicación, el interés se centra en el consumidor, presentando una experiencia que permite evaluar la valoración de una papa producida con menor contenido de agroquímicos, empaquetada y etiquetada. Los datos provienen de una Subasta Experimental-Segundo Precio de Vickrey, complementada con un formulario de encuesta, desarrollada durante 2017, en Mar del Plata. Se seleccionó dicho producto por encontrarse plenamente incorporado a la alimentación de los argentinos, con un consumo medio de 52 kg/per cápita/año (Bergonzi & Constantino, 2021), siendo el Sudeste de la Provincia de Buenos Aires (SEB), donde la ciudad en cuestión se encuentra emplazada, la principal región productora del país. Por lo general, se produce con escasa diferenciación y se comercializa, en el mercado doméstico, sin empaquetar. Los resultados indican que los participantes valoran las variedades de papa con buenas aptitudes culinarias, producidas con bajo impacto ambiental y en un envase etiquetado que permita su correcta identificación.
