Factores que condicionan la elección de compra de alimentos frescos orgánicos: el caso del pollo

Abstract

Desde fines del siglo XX, la demanda de alimentos diferenciados por calidad y precio ha experimentado una fuerte expansión, la que es explicada por la creciente preocupación de los consumidores acerca de la calidad de los alimentos que adquieren. De esta forma, son los atributos presentes en dichos productos los factores que condicionan tanto las elecciones de compra como la disposición a pagar por esos alimentos. Este trabajo constituye una investigación de carácter exploratorio, siendo sus objetivos detectar los atributos de calidad determinantes en la elección de un producto orgánico e indagar la medida en que los mismos condicionan la disposición a pagar por dicho producto. La investigación se realizó en base a una degustación comparativa de dos variedades de carne de pollo.
