Las preferencias de los consumidores argentinos por alimentos diferenciados por atributos de calidad de procesos: el caso de la leche entera orgánica

Abstract

La implementación de regulaciones sobre la calidad de los alimentos puede ser analizada calculando la disposición a pagar de los consumidores por los productos regulados. El objetivo del trabajo es cuantificar la disposición a pagar por la leche entera UAT orgánica, por parte de consumidores de nivel socioeconómico medio-alto y alto de la ciudad de Buenos Aires, Argentina. Se aplica el método de Valoración Contingente y se estima un modelo logístico binomial múltiple. El resultado obtenido, de un 16,5% adicional al precio que abonarían estos consumidores por adquirir leche entera UAT convencional, supera al diferencial de precio observado en el mercado (13%). Si el gobierno reconociera que ciertos atributos de la leche orgánica tienen naturaleza público-privada, se justificaría algún tipo de intervención que con-tribuyera a una mayor disponibilidad del producto y a precios más accesibles; promoviendo la expansión del mercado y la generación de beneficios sociales y ambientales de la producción orgánica.
