Abstract

Le terrain des mutations dans l'approvisionnement dans la restauration collective se caractérise par un foisonnement d'initiatives et des processus enchevêtrés d'émergence organisationnelle. Dans le contexte général d'une recherche-accompagnement collective et pluridisciplinaire, le souhait de rendre compte et d'accompagner les initiatives et les mutations sur ce terrain multi-acteurs et multi-niveaux d'analyse confronte à de vraies difficultés méthodologiques. Leur dépassement repose sur un rapport au réel envisagé en termes d'exploration des possibles : il s'agit d'explorer les possibles que les initiatives passées ont permis de concrétiser et les possibles que les mutations rendent envisageables.
