Gestion Tecnologica en Restaurantes: Desarrollo y Validacion de un Instrumento de Medicion

Abstract

Dada la importancia de la tecnologia como determinante en la generacion de innovacion, es que su gestion es considerada una capacidad estrategica para el beneficio empresarial; no obstante, los trabajos tanto teoricos como empiricos sobre gestion tecnologica en empresas restauranteras y otras de servicios, son casi inexistentes. Por este motivo, el objetivo del articulo es validar un instrumento de medicion, representando una vital herramienta para la obtencion de informacion y entender este fenomeno empresarial. El estudio empirico se realizo sobre una muestra probabilistica de 132 restaurantes del destino turistico de Playa del Carmen, Mexico. Tres factores surgieron del Analisis Factorial Exploratorio (AFE): estrategia tecnologica, practicas de I+D y asimilacion tecnologica. En conjunto, estos factores explicaron el 61.63% de la varianza acumulada, ademas de tener una consistencia interna satisfactoria de acuerdo con el estadistico alfa de Cronbach (a=.909). Como resultado, se obtuvo un instrumento fiable y valido, demostrando su capacidad para medir tres pertinentes dimensiones de la gestion tecnologica en empresas restauranteras. Representando un aporte teorico al ampliar el concepto de gestion tecnologica y adaptarlo en empresas de servicios; mientras que la aportacion practica deriva en la aplicacion del instrumento, el cual pudiera apoyar en el monitoreo de la gestion tecnologica y brindar informacion a los tomadores de decisiones para facilitar las tareas y capacidades de innovacion.
