Abstract

[eng] This paper examines the implicit definition of taste that consumption enquiries carry and the theoretical definitions of taste as system of dispositions or as system of oppositions to which sociologists may refer The enquiry carried out by the INSEE on the food purchases of the French, considers tastes as consumption habits available supply determines use use determines habits habits determine tastes. On the other hand from the point of view of the sociology of culture tastes are norms and distances from the established norm Thus sociologists who study tastes generally prefer to deal with opinion surveys rather than with consumption enquiries with the names of the dishes rather than with the names of the products However the choice of the object of the study is not socially indifferent whether one studies menus or shopping-baskets one is faced with different definitions of tastes definitions which fit unequally with the tastes and the habits of the different classes [fre] Les enquêtes sur la consommation et la sociologie des goûts. . On examine à la fois la définition implicite du goût que véhiculent les enquêtes de consommation, et les définitions théoriques du goût, comme système de dispositions ou comme système d'oppositions, auxquelles peut se référer le sociologue. L'enquête de l'INSËE sur l'alimentation des Français définit implicitement le goût comme une habitude de consommation : l'offre fait l'usage, l'usage fait l'habitude, l'habitude fait le goût. Pour la sociologie de la culture, les goûts sont plutôt des normes, et des écarts à la norme légitime. C'est pourquoi le sociologue préfère en général les enquêtes d'opinion aux enquêtes de consommation, les noms de plats aux noms de produits. Il reste que le choix de l'objet d'étude est loin d'être socialement neutre : selon que l'on étudie des paniers ou des menus, on se trouve confronté à des définitions du goût qui sont inégalement proches des goûts et des pratiques des différentes classes.
