Abstract

Human nutrition can be the object of economic analysis. There are perfect distinguishable patterns to be found in the changes of a society food diet as economic development makes progress, as well as a relationship, specially in low income countries, between the populations food diet and the country social stratification. The purpose of this paper is to use available data on food consumption of countries with very different development levels to analyze in a systematic way the influence that some basic economic variables may have on the volume and composition of per capita calory ingestion. The results obtained are used to place the Spanish food mode1 in the context of the dominant trends of food consumption in the EC area. La nutrición humana puede ser objeto de análisis económico. Existen pautas perfectamente discernibles en los cambios de la dieta alimentaria de una sociedad a medida que progresa el desarrollo económico y asimismo puede detectarse una asociación, especialmente en los países de bajos ingresos, entre los hábitos alimentarios de la población y su estratificación social. El objeto de este artículo es utilizar la información disponible sobre el consumo de alimentos en países de muy distinto nivel de desarrollo, para analizar en forma sistemática la influencia que algunas variables económicas básicas ejercen sobre el volumen y la composición de la ingestión de calorías per cápita. A continuación, se utilizan los resultados alcanzados en la primera parte del trabajo para situar el modelo alimentario español en el contexto de las principales tendencias en el consumo de alimentos prevalecientes en el área de la CEE.
