Abstract

L'article explore l'hypothèse selon laquelle l'origine insulaire des produits agricoles exerce des conséquences sur l'ensemble de leur filière de valorisation jusqu'au consommateur, en particulier lors des processus de transition vers des filières agri-alimentaires reterritorialisées. Trois études de cas procurent le support de cette analyse : les légumes de l'ile de Batz, la viande bovine de Belle-Ile-en-Mer, le Pineau et le Congnac de l'ile de Ré. Ces trois filières sont abordées sous un angle systémique, en s'intéressant à leurs divers maillons (production, transport et logistique, transformation, distribution, consommation) sous l'angle historique, géographique, tehnique et productif, économique, organisationnel et institutionnel. La comparaison de ces filières cherche à mettre en évidence régularités et différenciations, en s'intéressant en particulier aux processus de différenciation des produits insulaires et aux coordinations entre acteurs qu'elles suscitent.
