Abstract

En Uruguay, pays qui s'est construit autour des élevages bovin et ovin à partir du XVII e siècle, la surface agricole totale de 16 millions d'hectares était consacrée en grande partie à cette activité extensive. Or, à la fin XX e siècle et surtout au début du XXI e siècle, le pays a connu un développement accéléré des productions végétales, directement lié à l'installation d'acteurs étrangers.
