Abstract

Dans le cadre du projet IDEALG, le Pôle halieutique AGROCAMPUS OUEST s'intéresse en particulier au marché français des algues alimentaires. La consommation directe des algues alimentaires est un phénomène émergent en France et en Europe, notamment grâce à la démocratisation de la restauration japonaise et de la consommation de sushis. Cependant, le fait d'avo ir peu d'informations sur la consommation d'algues au niveau national peut être un frein pour les industriels de la filière des algues alimentaires. La problématique d'étude traitée au sein d'AGROC AMPUS OUEST est la suivante : « Comment développer le march é des algues alimentaires ? » .
