Comparative Studies Of Different Brands Of Palm Oil Sold In Bangladesh

Abstract

This study aimed to assess the quality of different brands of palm oil as Shabnam, Teer, Meghna, S.Alam, and Mizan sold in the local market of Bangladesh. The moisture content found ranged from 0.017 to 0.03%. The mean for acid value was 0.16 to 0.197 (g KOH/100g). The iodine value obtained from palm oil brands was 51.44 to 56.65 (g iodine/100g fat). The specific gravity of various palm oil brands was 0.914 to 0.920. The Vitamin A contents were found between 12.21 to 15.60 ppm. The brand Shabnam had a tiny amount of moisture. The lowest acid value found in the Meghna brand and second-lowest was in Shabnam, but no significant difference was found. The results for Iodine value were lowest in Meghna and Shabnam compared to others. The highest specific gravity was found in the S.Alam brand. Mizan and Shabnam brands had the highest levels of vitamin A, although there was no significant different. The sensory attributes for all brands were evaluated in terms of color, flavor, and overall acceptability. Teer brands retained the highest sensory values, followed by Shabnam, Meghna, S.Alam, and Mizan. Overall, the Meghna and Shabnam brands were of better quality in terms of stability and susceptibility to oxidation.
