Les valeurs du vin à travers l'histoire

Abstract

During Antiquity, the values associated with wine are symbolic, religious, social and political. In Athens, wine is at the heart of the offerings and the sacrifices, just as tributes, banquets and orgies were. After-wards it becomes "the blood of Christ" and bishops and abbots would become the first wine growers in the medieval city. Gradually, wine becomes widespread as a product of mass consumption. But in spite of the development of plantations, it remains relatively expensive because of low yields, problems of preservation and high taxes. With the qualitative differentiation of the producers, which begins from the XVIIth century, then the successive classifications, wine acquires a market value hierarchically organized at the heart of business, speculation and the ostentatious contemporary signs of consumption. --- Durant l'Antiquité, les valeurs du vin sont symboliques, religieuses, sociales et politiques. À Athènes, le vin est au coeur des offrandes et des sacrifices, comme des hommages, des banquets et des orgies. Il devient par la suite "le sang du Christ" et évêques et abés seront les premiers vignerons de la cité médiévale. Progressivement, le vin se répand comme produit de consommation de masse. Mais malgré l'essor des plantations, il demeure relativement cher à cause des faibles rendements, des problèmes de conservation et des taxes élevées. Avec la différenciation qualitative des producteurs, qui débute dès le XVIIe siècle, puis les classements successifs, le vin acquiert une valeur marchande hiéarchisée au coeur du commerce, de la spéculation et des signes ostentatoires de consommation contemporains.
