El impacto de la crisis en el deterioro alimentario en España

Abstract

En este artículo examinamos el impacto que la crisis iniciada con la implosión de la burbuja inmobiliaria (1999 – 2007), ha tenido sobre el consumo de alimentos por las familias españolas. La extraordinaria duración e intensidad de la crisis económica iniciada en 2008, se ha traducido en una contracción del Consumo Privado en general y, más concretamente, del consumo de alimentos. En el periodo 2008 – 2013 el gasto en alimentos ha registrado una contracción real del -19´6%. Entre los alimentos cuyo consumo experimenta una mayor reducción encontramos aquellos que suministran un mayor valor proteínico al consumidor y, en general, alimentos frescos (carnes, pescados y frutas). Aumentan los derivados lácteos, el azúcar y la mantequilla, probablemente utilizados como sustitutivos de bienes de primera calidad (carnes y pescados frescos). Incluso se ha operado una reducción en aquellos alimentos que tradicionalmente han sido clasificados como bienes inferiores.
