Abstract

The present research communication is aimed at investigating the most appropriate cost effective food preservation technology suitable for implementation with limited financial resources. It is hoped that simple designs discussed in the present communication can be fabricated using simple tools and relatively cheap and localy available materials by small scale industries. The first phase of the publication presents detailed description along with preliminary heat transfer analysis for the fruit dryers developed and tested the present communication.
