Abstract

Dewasa ini, bisnis kuliner menjadi salah satu bentuk bisnis yang menjanjikan.Berbagai macam jenis makanan bermunculan dengan ragam kreatifitas yang menarik.Makanan biasa dikreasikan menjadi makanan yang memiliki cita rasa dan nilai jual tinggi.Salah satu makanan biasa yang sering kita temui adalah nuget dengan kandungan protein yang tinggi. Nugget merupakan salah satu bentuk produk olahan restrukturisasidengan bahan baku daging lumat atau serpihan yang dicampur dengan tepung, konsentrat protein, bumbu-bumbu dan bahan sejenisnya kemudian dicetak, direbus dan digoreng sampai matang. Produk nugget yang beredar di pasaran biasanya berupa nugget ayam, nugget sapi dan nugget ikan. Saat ini nugget ayam adalah salah satu produk pangan yang paling banyak ditemukan di pasaran (Bintoro,2008).
