Consumo de café de especialidad, evidencia desde una encuesta en el Partido de General Pueyrredon

Abstract

El objetivo general de esta propuesta es estudiar la demanda de café de especialidad (CE) en el mercado del Partido de General Pueyrredon (PGP), siendo las preguntas de investigación: ¿qué factores demográficos y socioeconómicos caracterizan al consumidor?, ¿cuál es su frecuencia de consumo?, ¿dónde prefiere consumir?, ¿qué atributos valora más? A tal fin, se analizan descriptivamente datos provenientes de una encuesta relevada durante el año 2023, en dicho Partido. Los resultados preliminares indican la elección de las cafeterías para consumir este tipo de café, un consumo no tan frecuente, la valoración de los atributos sensoriales "sabor" y "aroma" y la preeminencia de jóvenes consumidores.
