Abstract

Une première partie est consacré.e à la présentation du modèle français de production de viande bovine : données, structure économétrique, utilisation du modèle. Cette présentation a valeur illustrative car pouvant s'appliquer aux autres modèles nationaux réalisés. Une seconde partie a pour objet l'analyse des modélisations retenues pour la production et les échanges : pertinence, validité, adéquation, généralisation et prolongements envisageables
