Abstract

Exposé à une information alarmante diffusée dans le champ social concernant le risque alimentaire, le consommateur moderne se trouve confronté à une situation d'inconfort psychologique provoquée par la consommation de produits issus de l'agriculture et de l'industrie agroalimentaire. Afin de limiter cet inconfort, le consommateur peut soit 1) changer ses habitudes d'achat et de consommation (hypothèse contraignante), soit 2) mettre en œuvre des mesures de réduction du risque. L'objectif de cet article est de présenter une nouvelle classification des réducteurs de risque permettant d'intégrer les logiques d'achat et de consommation déployées par le mangeur.
