Abstract

Food quality certification is one of the measures to deal with the problems of trust and information asymmetry in food supply chains. It is specifically important for high-value-added products and food based on traditional recipes, as well as for emphasizing regional features, of which credence attributes are difficult to assess even after the purchase. Supply chains of certified quality products are particularly vulnerable to problems with distrust and information asymmetry. In this chapter, we analyse the importance of product certification to increase the level of trust and reduce information asymmetry in the food chains on the example of three cheese supply chains: Italian Parmigiano Reggiano, French Comté Cheese, and Polish Koryciński Swojski Cheese. Each of these chains has a different scale of operation and struggles with various problems related to information asymmetry. They are also characterized by a different level of vertical and horizontal integration and the specificity of solutions that increase trust in these chains. In our analysis, we also focus on the general role of information asymmetry and trust in the coordination of physical flows of products, mechanisms of securing quality as well as governance structures, and legitimacy and enforcement.
