Abstract

The objective of this paper is to analyze household preferences for vegetable consumption in Côte d'Ivoire. Inspired by the hedonic model, our approach uses a type 2 Tobit model to reveal consumers' preference. Data come from a survey conducted in 2019 in Bouaké, among a randomly sample of 366 consumer-households. Results show that the intrinsic attributes of vegetables positively influence consumer' preferences at purchase. Furthermore, the organic nature of the vegetable increases the price that consumers are willing to pay, revealing their preference for vegetables chemical pesticide free. Therefore, actions to promote organic agriculture must be encouraged.
