Abstract

Bruichladdich, une distillerie écossaise de whisky renommée, arbore fièrement son slogan : « We believe terroir matters » (« Nous croyons en l'importance du terroir »). La marque suggère ainsi que sa situation géographique joue un rôle déterminant sur la qualité de son whisky. Cette philosophie rappelle celle du monde du vin, où l'influence du terroir est avérée et reconnue : la qualité du vin est dépendante de la vigne dont il est issu et les conditions de développement de la vigne sont intimement liées à la population microbienne de la terre du vignoble. Ce lien entre terre, vigne et vin explique la volonté des acteurs de la filière viticole de protéger la réputation de leur terroir via des réglementations et systèmes d'indications géographiques divers.
