Abstract

S'appuyant sur les données d'une enquête auprès de 482 consommateurs de viande en France, différents profils de consommateurs et non-consommateurs de viande de cheval sont caractérisés. Des stratégies managériales ciblées sont proposées et discutées au regard de ces résultats.
