Abstract

Este artículo retoma la evolución del concepto de Sistema Agroalimentario Localizado, centrado sobre su relación con el consumo y la estructura de la canasta de bienes y servicios calificados por el origen, en particular el peso creciente de la referencia al turismo en la literatura. Presenta nuevos enfoques teóricos que permiten profundizar la relación entre la calificación de la canasta y la calificación de los consumidores a través de sus prácticas de consumo. De ahí establece consecuencias sobre la dinámica de los Siales y su contribución a trayectorias de desarrollo sustentable a nivel ambiental y social.
