Abstract

L'hippophagie, historiquement fragile en France, connait actuellement une décroissance importante. Néanmoins, la viande chevaline présente de nombreux atouts répondant au contexte actuel de prise en compte croissante par la société des enjeux environnementaux, de santé humaine, de bien-être animal et de durabilité de l'alimentation. Dans ce contexte, l'objectif de cette recherche est de mieux comprendre le marché de la viande chevaline et d'étudier les leviers et les freins à sa consommation en foyer et hors-foyer, vis-à-vis des consommateurs comme des non-consommateurs de cette viande. Le travail s'appuie sur le traitement de bases de données existantes (INCA et KANTAR), sur des enquêtes qualitatives et quantitatives auprès de consommateurs et non-consommateurs de viande chevaline, et sur des entretiens avec des chefs cuisiniers.
