Abstract

Le paradoxe du café Benoît Daviron et Stephano Ponte Quae, Versailles, 2007, 354 pages. Le « paradoxe du café » désigne la contradiction économique apparente entre l'engouement du consommateur pour les cafés de spécialité et la crise affectant la production. Alors que le marché international est saturé par les cafés de qualité « inférieure », la pénurie de café « haut de gamme» s'accentue. Si la rémunération des producteurs ne couvre plus les coûts de production, les marges des torréfacteurs augmentent. Benoît Daviron et Stefano Ponte s'attachent à reconsidérer dans leur globalité les problèmes posés aux pays exportateurs. L'ouvrage montre que le prix payé par les consommateurs dépend plus des attributs symboliques et des services associés au café que des qualités intrinsèques du produit. Les auteurs plaident pour un nouveau régime de régulation des marchés internationaux qui permette aux producteurs de contrôler une partie de la rente produite, en développant des appellations d'origine et des labels de qualité.
