What price for food security ? Contingent valuation further to the European crisis of "mad cow"

Abstract

L'étude du comportement des consommateurs face au risque "vache folle" a été conduite à partir d'un échantillon aléatoire de 700 personnes de la région de Rennes. Le scénario contingent, visant à déterminer le consentement à payer (CAP) pour disposer d'une viande pour laquelle tout risque de contamination serait écarté, a fait l'objet de tests à travers une première enquête sur un échantillon non aléatoire. Puis pour tenir compte d'un certain nombre de biais liés, le scénario a fait l'objet de modifications. Ceci a conduit à raisonner en pourcentage du prix de la viande et à utiliser un processus original de révélation des préférences combinant le référendum et l'enchère. Le travail fait apparaître une forte demande de sécurité alimentaire, qui d'un point de vue pratique se traduit par l'importance attachée par le consommateur aux critères de traçabilité et de standards d'étiquetage. L'intérêt de cette différenciation se manifeste par un CAP équivalant à 22% du prix pour une viande présentant des garanties.
