Abstract

La mise en place de nouvelles technologies de production, plus respectueuses du bien-être des animaux dans les élevages, introduit sur le marché du produit fini un nouvel attribut : le respect du bien-être des animaux. Cet attribut peut être éventuellement valorisé sur le marché comme tout autre attribut (propriétés nutritives, goût,...) permettant ainsi une nouvelle différentiation du marché. C'est cette valorisation sur le marché qui est envisagé, la méthode d'évaluation contingente (MEC) qui permet de mesurer la valeur des biens non disponibles est appliquée au cas du bien-être animal (BEA). Dans un premier temps, les caractéristiques du BEA sont analysées afin, d'une part de définir les hypothèses concernant la modélisation du comportement des consommateurs, et d'autre part de déterminer la forme générale des scénarii contingents adaptés. Dans un second temps, la valeur qu'attribuent les consommateurs à l'accroissement du BEA généré par les directives européennes est définie. Dans un troisième temps, le modèle est élaboré.
