Abstract

Mr Rastoin intervient dans ce colloque qui interroge l'alimentation des prochaines décennies à la lumière d'un éclairage historique richement illustré. Il s'agit notamment de mieux comprendre les questions stratégiques actuelles au regard des ruptures et des références du passé, et de nourrir nos interrogations sur l'alimentation des années 2050 par une mise en perspective historique. Qu'est-ce que la tradition ? Qu'est-ce que l'innovation alimentaire ou culinaire ? De quoi parlons-nous quand nous voulons les préserver en préparant l'avenir ? C'est à une réflexion particulièrement riche, tout à la fois historique et prospective, que le Conseil National de l'Alimentation (CNA) et l'Institut Européen d'Histoire et des Cultures de l'Alimentation (IEHCA) ont menée au travers de ce colloque.
