Abstract

Resume de la revue : Lorsque leurs revenus augmentent, les menages ont tendance a affecter une part decroissante de leurs budgets a leurs depenses alimentaires. Ce phenomene, mis en evidence il y a plus d'un siecle par E. Engel, s'accompagne d'une evolution de la structure de la consommation, par substitution vers des produits plus "nobles" et plus onereux : il s'agit de l'effet qualite. L'objet de cet article est de rendre compte d'une de ses dimensions : l'alimentation service definie par l'auteur comme etant le recours a des produits, industriels ou non, ou a des modes de consommation susceptibles de faire gagner du temps et/ou de simplifier la preparation des repas aux menages. L'article se propose d'identifier ce type de produits par un indicateur de contrainte de temps, sur la base des resultats d'une enquete menee a bien par l'auteur en 1982. Il montre ensuite que les consommateurs les plus contraints en achetent plus que la moyenne, cette consommation etant en partie independante du niveau de revenu.
