Employment in food industries since the early twentieth century

Abstract

Le developpement des IAA est bien anterieur aux annees 1950 (periode a laquelle on le situe souvent) puisque, des la fin du XIXeme siecle, ces industries comptent plus de 400 000 actifs (contre 600.000 aujourd'hui). A cette date, leur heterogeneite economique est deja tres grande: une partie des IAA n'ont d'industrie que le nom, d'autres sont deja des industries au plein sens du terme. L'evolution seculaire de l'emploi dans les IAA est marquee par cette heterogeneite: le taux de salarisation, le taux d'accroissement du nombre de salaries, le taux d'accroissement de la taille des etablissements, le rythme et l'amplitude de ces differents taux varient d'un secteur d'IAA a un autre.
