Abstract

La concurrence entre formes artisanales et industrielles de production alimentaire se pose de plus en plus en termes de strategies de produits et de comportements sur les marches. Dans le cas de la boulangerie et de la boucherie, les innovations techniques et commerciales ont induit depuis 1965 le developpement d'entreprises industrielles de differents types. L'artisanat alimentaire a lui meme reagi et developpe divers comportements d'adaptation individuels ou collectifs, dissuasion, restructuration, imitation, differenciation, diversification.
