Abstract

Dans un contexte durable de saturation des marchés agricoles, les agriculteurs adaptent leurs systèmes productifs. Sont ici examinés, dans le contexte de la réforme de la PAC, divers types d'adaptations structurelles porteuses d'enjeux territoriaux : l'extensification des systèmes d'élevage, la diversification de l'activité agricole dans l'agrotourisme, la transformation de produits agricoles et la vente directe aux consommateurs, l'organisation collective d'une meilleure valorisation de la production dans le cadre de produits du terroir. Pour apprécier correctement les perspectives de ces adaptations, il est nécessaire de prendre en compte, non seulement les questions qu'elles posent du point de vue du fonctionnement des exploitations agricoles, mais aussi les situations éventuelles de la part d'autres agents au niveau de l'offre et l'évolution de la demande dans les secteurs d'activités considérés.
