Abstract

L'objet de cet article est de faire le lien entre la typicité dont sont porteurs les vins qui bénéficient d'une dénomination protégée, et le statut d'Appellation d'origine contrôlée (AOC) tel qu'il est conçu par le législateur. La typicité est définie comme l'ensemble des caractéristiques communes aux vins qui usent d'une même appellation. L'analyse des conditions d'usage que la loi impose aux vins d'AOC montre que la réglementation doit être perçue comme un système de garantie de la typicité. L'analyse du lien entre lieu et typicité montre que cette dernière ne peut être expliquée par les seules caractéristiques naturelles du terroir. Elle est déterminée au moins pour partie par l'organisation locale de la filière de production.
