Abstract

Cet article examine la sensibilité, par rapport aux prix et aux dépenses, de la demande alimentaire d'huiles et graisses dans l'Union européenne. Un système d'équations de demande conditionnelle, conforme à la théorie néo-classique du consommateur, est spécifié et estimé pour dix huiles et graisses. La version empirique de ce système de demande repose sur l'estimation d'un modèle de Rotterdam semi-flexible caractérisé par un nombre réduit de paramètres. Les résultats empiriques mettent en évidence de nombreuses relations de substitution entre les huiles et graisses, et en particulier entre les huiles de coco et de palmiste, ainsi qu'entre les huiles de palme et de colza.
