Modelling the consumption of home-produced vegetables, with an application to French households

Abstract

Cet article étudie l'arbitrage entre les achats et l'autoconsommation alimentaire. On présente un modèle de production domestique qui induit une élasticité nulle de l'autoconsommation par rapport à la dépense totale. On s'intéresse plus particulièrement à la consommation de légumes à partir des données de l'enquête Alimentation 1991 de l'INSEE. Compte tenu de l'information disponible, le modèle adopté consiste en une forme réduite du modèle structurel de production domestique. Il décrit la consommation et l'autoconsommation de légumes représentées par des formes fonctionnelles de type Working-Leser et estimées conditionnellement à l'exploitation d'un jardin potager. En conformité avec ce modèle théorique, les résultats montrent l'indépendance entre la consommation et l'autoconsommation de légumes.
