Abstract

La question que se posent les auteurs est celle de la place occupée par la fabrication de produits de terroir dans le management stratégique des petites entreprises agroalimentaires. L'analyse du système de gestion d'une population de ces entreprises de la région Languedoc-Roussillon conduit à distinguer quatre profils stratégiques de petites entreprises agroalimentaires. L'étude de ces profils fait apparaître le terroir plus comme un argument au service du marketing-mix de ces entreprises que comme un axe structurant véritablement le management stratégique de ces entreprises.
