Abstract

Le bien-être des animaux d'élevage est une préoccupation croissante pour les pouvoirs publics et les producteurs, du fait d'une demande forte des consommateurs et de la mise en place d'une réglementation européenne imposant la prise en compte du bien-être des animaux dans les élevages. Cette prise en compte pose dans un premier temps le problème de la mesure et de l'objectivation du bien-être animal. Ensuite, du fait d'une augmentation des coûts de production pour un élevage plus respectueux du bien-être animal, se pose le problème de la compensation des surcoûts par des gains de production. Il s'agit en fait de valoriser aux yeux des consommateurs l'attribut "respect du bien-être animal" des produits qu'ils consomment, par une augmentation de prix par exemple.
