Abstract

Cet article fait suite à un projet d'étude réalisé dans le cadre de la formation à l'INSFA. Alors que la grande distribution est un secteur d'activité largement concentré (les 5 premières centrales d'achat réalisent environ 90 % de la distribution des produits alimentaires en volume), celui de la Restauration Hors-Domicile - RHD - est actuellement en pleine évolution. Avec un taux de croissance de 10 % par an, il devient un marché prometteur et spécifique pour les entreprises agro-alimentaires qui y réalisent déjà 80 milliards de francs de chiffre d'affaires, pour un chiffre d'affaires global de 810 milliards de francs.
