Abstract

Les nombreuses crises ayant affecté le secteur agro-alimentaire ces dix dernières années ont entamé la confiance des consommateurs en leur alimentation. Cependant l'hygiène atteint aujourd'hui un niveau plus que satisfaisant et la qualité est un souci permanent des industriels. Cette situation s'explique principalement par le rapport particulier que l'homme entretient avec l'alimentation, d'une part, et la technologie, d'autre part.
