Abstract

La mise en place des quotas laitiers n'a pas provoqué de bouleversements profonds des structures des établissements du Grand-Ouest. Faisant suite à une phase de restructuration intense dans les années 70 et 80 et à la mise en place d'un outil industriel moderne et efficace, la période 1985-1991 a surtout été marquée par la poursuite des tendances passées, les fermetures des sites industriels les plus petits et les réorientations régionales en matière de fabrication que le contexte des quotas a favorisé.
