L'aval de la filière porcine bretonne : enjeux et stratégies

Abstract

La Bretagne est un des premiers bassins producteurs de porcs en Europe. Ce numéro hors série est une synthèse de l'étude réalisée en 1992 sur la filière porcine bretonne ; la production porcine, aux mains de 10 000 élevages professionnels représente 27% du chiffre d'affaires de l'agriculture régionale et 52% des volumes français. Production et abattage-découpe sont des activités très concentrées : les 10 principaux groupements de producteurs bretons détiennent 80% de la production et les 9 premiers abattoirs ont réalisé 95% des tonnages en 1991. La situation est différente pour la charcuterie-salaison, secteur en voie de concentration. La Bretagne comptait 74 unités de production d'au moins 10 salariés en 1991. Les échanges internationaux sont peu développés pour les produits de charcuterie, par contre 15% des volumes abattus sont exportés vers d'autres pays de la CEE. Pour que cette filière reste une source de richesses et d'emplois pour la Bretagne, elle devra savoir innover et combiner stratégie à moyen terme et adaptations rapides aux sollicitations du marché.
