Abstract

La consommation des produits de la mer est souvent présentée comme pouvant être une panacée à la solution des problèmes de nutrition. Mais, au niveau mondial il ne faut pas négliger qu'un certain nombre de tendances lourdes orientent de façon durable les structures de production-consommation: la ressource bien que naturelle et renouvelable ne peut pas être exploitée a l'infini et ses limites seront atteintes d'ici une quinzaine d'années, les besoins des consommateurs n'orientent que trop rarement les activités de production, la part des protéines d'origine aquatique dans la ration protéique a souvent tendance à diminuer. Dans les pays développés, malgré un risque de saturation de la demande, la filière n'est pas dominée par les aspects de consommation. Dans les pays en voie de développement, la demande devrait croitre mais les structures de captures, de débarquement, de commercialisation ne permettent pas d'y faire face. De plus, le jeu du commerce international favorise l'exploitation des espèces qui pourraient participer à l'alimentation des pays en développement en vue de l'approvisionnement des zones développées.
