Abstract

Ce document aborde les questions suivantes : l'état actuel des structures de production laitière dans notre pays, la nature économique de l'entreprise laitière, la compétitivité relative des régions françaises et des bassins laitiers, l'évolution prévisible de cette clientèle, en termes quantitatifs bien sûr, mais aussi quant à ses besoins futurs en questions de service et en consommations intermédiaires.
