A regional marketing chain for beef products in France

Abstract

Cet article présente les principales caractéristiques d'une coordination verticale par contrat dans la chaîne alimentaire bovine de deux régions françaises. Trois maillons de la chaîne sont impliqués, l'élevage, l'abattage-transformation et la distribution en grandes surfaces. Cette coordination opérationnelle avant la crise de l'ESB de mars 1996 a été testée sur une cinquantaine de points de vente, une dizaine d'industriels transformateurs et un nombre important d'éleveurs.
