Abstract

Ce document rassemble des statistiques détaillées sur la consommation alimentaire à domicile des ménages résidant en France. Par rapport aux sources accessibles jusqu'ici, son originalité est de fournir, pour chaque produit ou groupe de produits, la proportion de consommateurs dans la population totale, ainsi que la distribution des consommateurs en fonction du niveau atteint par leur consommation. L'estimation de ces distributions repose exclusivement sur les données recueillies par les panels de ménages de SECODIP tout au long de l'année 1991. Ces estimations ont été établies par le Laboratoire de recherche sur la consommation de l'INRA pour l'Observatoire des consommations alimentaires. Toutes les statistiques présentées ici ne portent que sur les aliments achetés (ou reçus en cadeau) par les ménages pour la consommation à domicile. Aucun compte n'est tenu des déchets ou d'autres causes de non-consommation : on suppose que les quantités achetées sont consommées en totalité par les membres du ménage ou par leurs invités. Par rapport à la consommation alimentaire totale de l'ensemble des personnes résidant en France, sont donc exclues : l'autoconsommation des produits des exploitations agricoles, des jardins familiaux, les produits de la cueillette, de la pêche, et de la chasse ; les consommations prises hors du domicile (cafés, restaurants, cantines,...) ; la consommation de la population des institutions (casernes, hospices, prisons,...).
