Abstract

Le document propose une modélisation micro-économique et dynamique de l'offre de viande bovine pour comprendre les choix productifs des éleveurs. Le cheptel bovin est défini comme un capital dont les variations de stocks correspondent aux décisions d'investissement ou de désinvestissement des producteurs. Pour prendre en compte l'hétérogénéité de la production, le capital-cheptel est décliné en fonction de l'âge et du sexe de chaque animal détenu. Après optimisation du comportement des producteurs au cours du temps, on dérive d'un ensemble de relations dynamiques la taille du cheptel par catégorie d'animaux et les décisions d'abattage. Ces relations permettent de comprendre comment le choix de conserver ou d'abattre un animal peut être modifié par des variations des prix à la production et des aides directes. Les estimations réalisées à partir d'un échantillon d'exploitations agricoles françaises montrent que l'effet positif des prix est supérieur à l'effet des primes sur les décisions d'offre de vaches à l'abattage ou de rétention d'animaux dans le cheptel.
