Identification des cycles des abattages bovins et des prix en France

Abstract

La production et les prix de la viande bovine suivent des évolutions cycliques dans plusieurs pays. L'objet de ce travail est d'identifier les cycles des abattages bovins et de prix en France et d'en déterminer les caractéristiques : longueur, périodicité. Les abattages de veaux ont suivi des cycles d'une durée proche de 6 ans de 1953 à 1972, puis d'une durée d'environ 9 ans jusqu'en 1989. Depuis 1990, l'évolution des abattages de veaux n'est plus cyclique. En revanche, sur l'ensemble de la période 1953-1998, les abattages de gros bovins suivent huit cycles d'une durée comprise entre 5 et 7 ans, sauf celui de 1964 à 1973. Contrairement aux abattages, les prix à la production des gros bovins et des veaux ne connaissent pas d'évolution cyclique avant le milieu des années 80. Enfin, l'amplitude des cycles des abattages de veaux et de gros bovins est influencée par les anticipations sur les variations des prix réalisées par les producteurs.
